Today I have a Pokémon-inspired treat! We bring to life the beloved Chansey in the form of delicious doughnuts (donuts) that are as adorable as they are irresistible.

This is a recipe for baked donuts that’s topped with a beautiful homemade strawberry glaze. Did I mention the strawberry glaze is made from just 2 ingredients?! I’ve always preferred baked doughnuts since there’s no need to deal with messy oil.

The doughnut goes from ordinary to the iconic Chansey with its signature egg in just a matter of minutes. So grab your Poké Balls and let’s bake!

Ingredients:

Doughnuts: 

  • 54 g oil 
  • 50g granulated sugar
  • 36g brown sugar
  • 1 egg (52g), room temp 
  • 112 milk, room temp
  • 160g all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt 
  • 1 tsp vanilla
  • + extra oil for greasing the doughnut pan

Strawberry Glaze: 

  • 86g strawberries, chopped 
  • 170g powdered sugar

note: the amount of sugar required may differ depending on the ripeness and juiciness of your strawberries. 

Decoration:

  • Mini white chocolate balls (I used mini Lindt Lindor balls) 
  • Candy melts – pink & black

 Equipment:

  • Digital food scale
  • Hand mixer 
  • Mixing bowls
  • Measuring spoons 
  • Doughnut pan*
  • Wire cooling rack
  • Baking pan

 

  • Blender 
  • Toothpicks
  • Piping bags
  • optional: sieve/strainer

*note: this recipe uses a 3 inch pan. A different sized pan can be used but the bake time will have to be adjusted accordingly. If using a different size pan, consider using larger chocolate balls for Chansey’s egg. 

Instructions:

This recipe makes 12 3inch doughnuts (donuts). 

Doughnuts: 

  1. Preheat the oven to 425F (218C)
  2. In a bowl, combine oil, granulated sugar and brown sugar. Mix until everything is well combined. If brown sugar lumps form, crush them with a spoon and continue mixing. 
  3. Add egg and vanilla extract. Mix until incorporated. 
  4. Add milk. Give it a quick mix.
  5. Add all the dry ingredients (flour, baking powder and salt). Mix until a smooth batter forms. 
  6. Set the batter aside. Grab your doughnut pan and lightly brush it with oil. 
  7. Pipe or spoon the batter into the pan. The doughnuts grow as they bake, only fill the pan about 60% full!
  8. Bake for 10 minutes. If you’re using a different sized pan, bake until a toothpick comes out clean. 
  9. Let the doughnuts cool in the pan for 5 minutes then transfer it to a wire rack to finish cooling. 

Strawberry Glaze: 

  1. Place strawberries in a blender. Blend until it is smooth. 
  2. Optional: I recommend putting the strawberry puree through a sieve/strainer to remove the seeds. This will make the glaze much smoother. It will also be more aesthetically pleasing without the seeds. 
  3. Transfer the strawberry puree to a bowl. Add powdered sugar and mix until a glaze forms. Add more or less powdered sugar depending on how you like your glaze. (More sugar for a thicker glaze. Less sugar for a thinner glaze). 

Putting it all together: 

  1. Grab a wire rack and a baking sheet. Place the wire rack on top of the baking sheet. The baking sheet will catch any drippings from the doughnuts. 
  2. Dip each doughnut in the glaze then set them on the wire rack to dry. 
  3. Melt the candy melts in the microwave in 20s intervals. Make sure you keep an eye on the candy melts because they can burn easily. Unwrap the white chocolate balls, stick a toothpick through the chocolate ball then dip half of it into the candy melt to create Chansey’s egg. Let the candy melt dry. 
  4. Place the remaining pink candy melts in a piping bag. 
  5. Melt black candy melts and place it in a separate piping bag. 
  6. Use the black candy melt to draw Chansey’s face. Then use the pink candy melt to draw arms and Chansey’s whiskers/hair. 
  7. Once dried, remove the ball from the toothpick and place it right in the center of the doughnut. 
1. Stick a toothpick through the chocolate ball
2. Dip half the chocolate ball into the candy melt
3. Shake off the excess then place it on a flat surface to dry
