Oatmeal Chocolate Chip Cookies

The only oatmeal cookie recipe you’ll need. It is crunchy on the outside, chewy on the inside and filled with gooey chocolatey goodness! I was really excited to eat them. They’re the perfect treat for any occasion or time of day (including breakfast. I mean, it has oats… oats are a breakfast food). 

For fun, I turned these oatmeal cookies into judgemental cats. Who wants a basic round cookie when you can get a side eye giving cat instead? 

Ingredients

  • 106g all purpose flour
  • 115g unsalted butter, room temp
  • 100g brown sugar
  • 50g granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt 
  • 1/2 tsp cinnamon powder
  • 130g rolled oats 
  • 1 cup chocolate chips 
  • + white chocolate & milk chocolate for decorating 

Equipment: 

  • Digital food scale
  • Measuring spoons
  • Hand mixer 
  • Mixing bowl 
  • Spatula
  • Baking pan
  • optional: silicon map or parchment paper, piping bags

Steps

This recipe makes 12 cat cookies. 

  1.  In a large bowl, combine butter, brown sugar and granulated sugar. Cream until it’s light and fluffy. 
  2. Add the egg and vanilla extract. Mix until it’s combined. 
  3. Add all the dry ingredients (flour, cinnamon, baking soda, baking powder and salt). Mix until it’s combined. 
  4. Fold in the oats and chocolate chips. 
  5. To create the cats (see photos below)
    – Gather one large ball of dough (2 tbsps worth of dough) and 2 small balls. The two small balls will be the ears.
    – Roughly shape the two small balls into triangles to create the ears. Gently press the ears against the large ball of dough. This is one cat.
    – Repeat the process with the remaining cookie dough. 
  6. To ensure the cookies keep their shape while baking, refrigerate the cookies for at least 30 minutes. 
  7. Bake at 350F (177C) for 15 minutes. 
  8. Transfer the cookies to a wire rack to cool. 
  9. Once the cookies are cooled, draw a judgemental face using melted white and milk chocolate. 
  10. Enjoy!
