Matcha Brownie Cookies

Hello! Welcome to my collection of recipes! This is a recipe for matcha brownie cookies. It’s exactly as the name suggests. It’s a brownie cookie that’s matcha flavoured. It really has it all. They are soft and chewy and very easy to make! All you need is a whisk! There’s no need for softened butter and no need to chill the dough. These cookies can be ready in under 30 minutes. If you don’t like matcha, I have a chocolate brownie version.

This is also a small batch bake! Don’t you just hate when a recipe says it makes 24 cookies? It’s fine if you’re sharing but if you’re just baking for yourself? there’s no need for that many! This recipe makes just 3 cookies. I’ll warn you though, these are on the larger side so if you want smaller cookies, you can divide the dough into 6 instead. These cookies also round up very well when baking! Watch the video to see the perfect circle they make once baked. Plus they have beautiful cracks throughout. They have a similar appearance to crinkle cookies, but they’re more like a cousin than a sibling. They have cracks but it’s much deeper and the cookie itself is flatter.

Ingredients

  • 1 egg yolk, room temp
  • 32g brown sugar
  • 17g unsalted butter
  • 50g white chocolate
  • 25g all purpose flour
  • 1/8 tsp baking soda
  • 2 tsp matcha powder 
  • pinch of salt
Equipment: 
  • Whisk 
  • Mixing bowls
  • Measuring spoons
  • Baking pan
  • Silicon mat or parchment paper 
 

Instructions

This recipe makes 3 LARGE cookies. 

  1. Preheat the oven to 365F (185C). 
  2. Combine the butter and white chocolate in a microwave safe bowl. Melt the chocolate and butter in the microwave. Set it aside. 
  3. In a separate bowl, add the egg yolk and brown sugar. Whisk the two together until the sugar dissolves and the mixture changes from a brown to beige. (Refer to photos below). 
  4. Add the melted butter and the melted white chocolate from earlier. Mix until it’s combined. 
  5. Add all the dry ingredients (flour, matcha powder, salt, and baking soda). Mix until a batter forms. It will be thick. 
  6. Divide the batter evenly into 3 balls. Each ball should be 2 tbsps. Make sure to give each ball room on the baking sheet as they spread! 
  7. There’s no need to chill the cookies. Place the cookies in the oven and bake for 10-12 minutes. 
  8. Let the cookies cool on the baking sheet or wire rack. 
  9. ENJOY!
