Bear Whoopie Pies

Easy Snack Cake. Individual Sized Cake.

Whoopie pies (also called the black moon by some) feature two layers of moist chocolate cake that sandwich a delicious marshmallow filling, forming a decadent yet simple treat.

With just two extra steps we turn basic whoopie pies into whoopie bears. 

Ingredients

Chocolate cake: 

  • 120g unsalted butter, softened
  • 75g granulated sugar
  • 85g brown sugar
  • 1 egg, room temp 
  • 1 tsp vanilla extract
  • 284g all purpose flour 
  • 42g cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 250g buttermilk*

 

Filling:

  • 80g marshmallows, melted (or “Fluff” marshmallow spread) 

Decoration: 

  • 14 candy eyes 
  • melted white chocolate 
  • melted milk chocolate or black royal icing
 

Equipment: 

  • Digital food scale
  • Hand mixer 
  • Mixing bowls
  • Measuring spoons 
  • Piping bags
  • Baking pan 
  • Silicon mat or parchment paper
  • Wire rack

 

*Note: make your own buttermilk by mixing 250g milk with 1 tbsp vinegar or lemon juice then letting it sit for 5 minutes before using. 

 

Instructions:

yield: 14 cakes (7 bear whoopie pies) that are 3.5 inches wide. 

  1. Preheat the oven to 350F (177C).
  2. Beat the butter, brown sugar and granulated sugar until it’s light and fluffy. 
  3. Add the egg and vanilla extract. Mix until it’s incorporated. 
  4. Add cocoa powder, flour, baking soda and salt. Mix until it’s combined. 
  5. Add buttermilk and mix until a thick batter forms and there are no more pockets of flour.
  6. Transfer the batter into a piping bag then pipe out the shape of a bear head on a lined baking sheet. Space the bears at least 1 inch apart.
    Optional: dip your finger in water then gently press down on the batter to flatten and smoothen it out.

  7. Bake for 13-15 minutes. 
  8. Transfer the bears to a wire rack and let it cool completely. 
  9. Place the marshmallows in a microwave safe bowl and microwave at 10-20s intervals until it’s melted. Place the melted marshmallow in a piping bag. If you’re using Fluff, you can skip this step. 
  10. Turn half of the bears over and pipe the marshmallow filling. Top with another bear to create a sandwich.

  11. Decorate the bears using the candy eyes, melted chocolate or royal icing. 
    Note: you can omit the candy eyes and use melted chocolate or royal icing for the eyes. 
  12. ENJOY!
